Date and Walnut Cake


Now I don't know if you know this already but I am a BIG fan of The Great British Bake Off and I am sick of drooling over all the cakes and feeling like I'm missing out. I decided enough was enough. Each week I will be vlogging (and blogging don't you worry!) a recipe from the Bake Off.

First up it's my take on Mary Berry's Walnut Cake and my healthy version is a Walnut, Date and Banana Cake.

Now you can actually have your cake and eat it. But now it's without any of that nasty added sugar and heavy bleached flour that gives you the post-cake blues.

Even better, this cake has a load of health benefits too! Huzzah!

Those bananas are a wonderful source of iron, fibre and potassium. The dates are bursting with potassium, copper and magnesium and the walnuts are a great source of omega-3 essential fatty acids. Your body will be thanking you, I promise.

It's so good that almost every slice has disappeared in my house and I only baked it yesterday. I've had people nabbing it for breakfast, snacks and dessert! So if you do decide to bake one of these then hide it. Hide it far far away.

On your marks, get set...Baaaaake!

Ingredients

70ml coconut oil

3 flax eggs

3-4 bananas

50g coconut yogurt

200g walnuts

300g dates

400ml spelt or buckwheat flour

1 tsps baking powder

4 tsps cinnamon

Method

1. Preheat your oven to 180C/160C fan. Using some extra coconut oil, get some parchment paper and line a round cake tin or a loaf tin.

2. Start off by pouring the 70ml of coconut oil in a bowl, then beat in the eggs and mash up the banana and pop in the yogurt. Beat until it's as smooth as a dolphin.

3. Stir in those walnuts and dates. Next up, fold in the flour, baking powder and cinnamon.

Feeling a bit dry? Add a splash of unsweetened almond milk or water!

4. Now pour mixture into a lined tin and bake it in that oven for around 35-45 mins. Keep an eye on it though, because it might cook quicker! Once it looks risen and browned and you can pop a knife in the middle and it comes out clean then it is done!

It should smell so good that a tear might form in the corner of your eye.
