I always buy bananas with the intention of eating them. That good intention lasts about 5 minutes until I remember I can't stand bananas. Weird, right? I love banana bread, it's one of my top 5 things of all time. It deserves a knighthood, a crown and maybe even a shrine. I love banana ice cream and I pretty much love banana flavoured everything. But bananas on their own, ew no. Get them out of my face. Ah well, I've always been a weird one.
My heart goes out to those browning bananas who sit sad and lonely in the bowl until I realise I can turn them into something magical.
Banana bread! This foolproof recipe will produce perfect results every single time.
Ingredients 225g spelt flour 75g very soft butter 110g coconut sugar 1 large beaten egg 2 tsps baking powder 4 ripe bananas (peeled and mashed) Grated zest of 1 lemon Grated zest of 1 orange
Method Preheat the oven to 180C and line and grease a loaf tin. Put butter, sugar and eggs in a large mixing bowl. Sift in flour. Whisk this all together with an electric mixer. It will be quite dry at this stage so don't worry! Add the lemon and orange zest and mashed bananas. Whisk again until it's all mixed up. Spoon into prepared loaf tin and bake in centre of oven for 45-50 mins. It is cooked when it is golden, risen and springs back when pressed with a finger. Leave to cool in tin for ten minutes. Then turn out and finishing cooling on a wire tray.
There's plenty of things you can add to make this an extra special banana bread so don't be afraid to change it up. Raisins, chocolate chips, pecans... Oh the possibilities are endless!
