Vegan, gluten-free, dairy-free and no-bake. Is there anything this pudding can't do?
It's silky, rich and you'll be sad when it comes to your last spoonful.
300g organic silken tofu (I like Clearspring. Always make sure you're going for non-GMO and organic tofu)
2 heaped tbsps cacao powder
3 tbsps maple syrup
1/2 tsp vanilla extract
Get your blender and whizz it up. Pop in the fridge to set and then it's ready to be demolished. I mean eaten delicately. Definitely not demolished...
It just a curd to me how much I love this pudding.
Get it? Curd because bean curd. You know, tofu?
