Ingredients 150g desiccated coconut 50g coconut flour 1 can coconut milk (just use the creamy part and leave the watery part. Don't throw the watery part away as this can be used for lots of other recipes!) 5 tbsp maple syrup 1 tsp vanilla extract Pinch of salt 200g dark chocolate
Method In a food processor add the desiccated coconut, coconut flour, coconut milk and maple syrup. Mix for around 2 mins. Remove from the food processor and shape into bars. Place them on a tray lined with parchment paper. Put in the freezer for around 15 mins. Whilst the coconut mixture is in the freezer, melt the chocolate in a heatproof bowl over a pan with water. Simmer on a low heat and mix the chocolate round occasionally. Once melted allow to cool for a bit. Remove the bars from the freezer and even dip each bar into the chocolate or pour oven evenly. Place on a cooling rack. Remember to place something underneath the rack as there will be a lot of dripping chocolate! Allow them to set and then tuck on in!
