Blackberry Cheesecake


Dessert week!

The bakers faced three challenges this week: rich tortes, creme caramel and meringue. Packed with refined sugar, gluten and all things bad!

Not here though... I have made a healthy, fresh and light dessert that will get your tastebuds tingling. Technically no baking involved but I promise it delivers on the taste front.

A gluten-free, dairy-free and refined sugar-free blackberry cheesecake that is perfectly smooth and 100% irresistible!

This nut-based raw cheesecake recipe just takes two easy steps: base (into food processor and pop into pan) and topping (thrown into food processor again and poured on top of crust)

It tastes even better than ordinary cheesecake.

If you're craving something sweet but also want to nourish your body with goodness then this raw cheesecake recipe will do the trick, hands down.

Ingredients

For the base:

100g pecan nuts

25g desiccated coconut

20g grated cacao

150g pitted dates chopped

2 tbsps maple syrup

3 tbsps melted coconut oil

For the topping:

150g cashew nuts (either activated overnight or if you're pushed for time, pour boiling hot water over the cashews, soak for 1 hour uncovered and then drain)

200g blackberries (plus a few spare for decoration)

1 tsp vanilla extract

4 tbsps maple syrup

Juice of one lemon

Zest of 1/2 lemon

Seeds of 4 cardamom pods

4 fresh mint leaves for decoration (optional!)

Method

Blend all the base ingredients together in a food processor and then pop into a round cake tin and squash down using a spoon. Leave to set in the fridge for 20-30 minutes. Next up, blend all the topping ingredients together and spread on top of the base.

Pop it in the fridge until you are ready to devour this gloriousness!

It's fresh, tasty and packed with minerals and vitamins.

Preparing a raw dessert is always so simple and they never disappoint. They're so versatile as the main ingredients are usually the same (dates, coconut oil, nuts and seeds etc) but you can recreate so many healthy versions of all your favourite treats with just a few ingredients. So get creative and create your own version of your favourite naughty treat!
