Christmas Cake

It's almost Christmas Day. Have you made your cake yet? Nope? Don't panic. I am your fairy godmother sent to save Christmas. We've all been there. You meant to make it way back in September and be all prepared this year but things got in the way. Don't you worry - this luscious healthy homemade version is packed with fruits and nuts and can be made as late as you like and it's completely hassle free!

Ingredients

450g mincemeat (See my Mince Pie recipe to find out how to make this!)

225g buckwheat flour

3 tsps baking powder

150g coconut sugar

150g coconut oil

175g dried mixed fruit

50g walnuts

Zest and juice of 1 orange and 1 lemon

3 flax eggs (or mashed banana)

Method

Preheat the oven to 170C.

Place all the ingredients in a bowl and mix well.

Place the mixture into a greased and lined 20cm round cake tin.

Cook in the oven for about 1 1/2 hours - 2 hours until the top is soft and springy.

Leave to cool in the tin for around 20 minutes - then turn out not wire tray to finish cooling.

My last-minute quick-mix Christmas cake is perfect if you haven't had the time to follow a traditional recipe. It also tastes great as well.
