Homemade Good-for-you Granola

Try this energy-boosting granola to start your day - so good you'll find yourself wanting to eat it all day long! 

 

Granola is healthy, so simple and just the most delicious treat. Be careful though, most of the granola that is sold in the shops is FULL of sugar, unhealthy fats and added oils. Yuck. 

 

The packaging can be deceiving with regards to the shop-bought granola with all the pictures of sunshine, butterflies and green fields. Don't be fooled, those companies know what they're doing! Luring you in to convince you that it's a healthy product when in fact it's not! Very naughty. 

 

 

 

It's so  much better to make your own. I always think how much nicer it is to know what goes into your food. 

It allows you to control the quality of ingredients and to experiment with fun new flavours. 

 

Ingredients

300g rolled oats

3 tbsp maple syrup

1 tsp vanilla extract

50g sunflower seeds

4 tbsp sesame seeds

50g pumpkin seeds

100g flaked almonds

100g goji berries

50g coconut flakes/desiccated coconut

 

Get yourself some whole rolled oats, full of fibre and tons of vitamins and minerals such as folate, iron and magnesium.

 

Nuts and seeds add a lovely flavour and are packed with those healthy nutrients and protein. Just 35g of pumpkin seeds contains nearly half the recommended dose of magnesium, which is so good for you and is known to help your body relax

 

Now for your sweetener, get yourself some local raw honey or organic maple syrup. You don't need much at all, which is the beauty of this recipe!

 

Don't be scared now, I guarantee it's the easiest recipe EVER

 

 

Don't be afraid to add or remove ingredients. Play around it with it, create new flavour combos and add different ingredients such as chia seeds, pecans, cherries, flax seeds, unsweetened apricots, dates...Just go wild! Try to keep your ratio of wet-to-dry ingredients roughly the same as the original recipe for best results.

 

 

Method

1. Pre-heat the oven up to 150C/fan 130C. You don't want the oven too hot. Slow and low is the key to crunchy and dry granola without those burnt bits (as you can see from the top image, I didn't take my own advice. Oops!) Stick with a low temp, keep your eye on the mixture and stir from time to time. Which I didn't. So I now have burnt granola. I'm a fool. 

 

2. Mix two tablespoons of melted coconut oil, maple syrup, vanilla extract in a large bowl. Then tip in all the remaining ingredients apart from the dried berries. Bake it for 15 minutes then mix in the dried goji berries and bake for 10-15 mins more. 

3. Ta da! Let it cool down and store in an airtight container, it can last up to a month.

 

Granola is amazing as a breakfast staple with unsweetened almond milk or coconut milk, sprinkled on yoghurt, in smoothie bowls or just add a little sprinkle to whatever you fancy!
