Crunchy Cardamon Biscuits


"If you feel there is something missing in life...it is almost always a biscuit."

These crunchy cardamon biscuits are the perfect accompaniment to a cup of tea with a lovely subtle spice flavour.

They are the ultimate weekend bake - easy peasy, only a few ingredients and are great to munch as you watch a Saturday night movie curled up on the sofa.

Ingredients

150g spelt flour (or buckwheat)

75g butter (or coconut oil)

50g coconut sugar

1 tsp ground cardamon

1/2 tsp ground ginger

1/2 tsp ground cinnamon

1 egg

Method Rub the butter and flour together. Then add the sugar and spices. Beat the egg in a separate bowl and add 2 tbsp to the mixture. Mix all together to form a dough. Chill the dough in a fridge for around 30 minutes. Once it has chilled, roll it out on a floured board and cut into shapes using a biscuit cutter. Place the biscuits onto a greased baking sheet and bake for around 10-15 minutes. Allow the biscuits to cool and then they're ready for munching!

What I love about these biscuits is that they're the perfect base to allow you to create beautiful flavour combinations with. Pistachio, chocolate, cashews, macadamia, lemon, orange and almonds are all ingredients that would team up well with the cardamon.
