Halloumi and Peach Salad
This fresh and light salad celebrates summer in all it's glory!

Fruit and cheese is a combination that is completely and utterly irresistible.
Salty halloumi, sweet and juicy peaches, zesty lime, crunchy salad leaves and spicy dukkah means you get absolutely everything in one bite - sweet, salty, zesty and spicy!

Feel free to mix and match the flavours. There are so many ways to enjoy this super simple salad. You can add in all sorts of extra bits - arugula, walnuts, cherries, green beans, balsamic vinegar... You really can't go wrong! Feel free to grill the peaches and halloumi too. Perfect for a BBQ!

I am not usually a salad fan, caesar salad and salad nicoise bore me to tears and always leave me hungry.
But for extra special salads I make an exception and this one is definitely extra special!
Ingredients
2 peaches sliced 200g halloumi cheese sliced 3 garlic cloves crushed
Salad leaves of your choice 2 large handfuls of baby leaf spinach Handful of chopped basil and mint 1 tbsp Dukkah (can be bought already pre-prepared or can be made with 110g hazelnuts, 80g sesame seeds, 2 tbsps coriander seeds, 2 tbsps cumin seeds, 2 tsps black pepper, 1 tsp salt. Blast them all up in a food processor or a blender and then heat in a frying pan on a medium heat)
2 tbsps olive oil Juice and zest of 2 limes

Method
1. Mix the salad leaves, spinach and chopped herbs together in a serving dish
2. Mix together the lime juice, lime zest and olive oil. Add to the leaves and herbs and mix well
3. Fry the halloumi and crushed garlic over a medium heat until holden and soft
4. Arrange the garlic, halloumi and sliced peaches over the leaves. Drizzle over a little olive oil and some finely chopped mint and then sprinkle over the Dukkah.
