Elderflower, Coconut Water & Lime Mocktail
This mocktail is a final celebration of summer! Savour the last of the warm weather, spontaneous holidays and long evenings. Try this delicious twist on a classic cocktail that is ideal for the last of the summer evenings.
Yesterday was the hottest day of the year and it was a scorcher. This mocktail was the perfect answer to my "I'm too hot, waa, save me" woes!
It's sunset-worthy and provides the perfect illusion of a temporary escape to more tropical destinations. It's a slightly healthier alternative to the normally syrup-laden mocktails (there is still sugar in there though so don't go knocking these back 10 at a time).
Ingredients
120ml organic elderflower juice
120ml coconut water
120 ml sparkling water or mineral water
Handful of fresh mint leaves
Squeeze of lime
Crushed ice
Strawberry to garnish if you're feeling super fancy
If you're feeling more adult and want to turn this mocktail into a cocktail then gin or rum would work perfectly!

All you gotta do it mix all the ingredients together and serve!
