Passionfruit & Mint Tarts
Passionfruit has such a great flavour and these zingy tarts are a perfect way to enjoy this tropical treat! The tart flavour in the passionfruit work really well with the creamy and sweet honey and yoghurt filling.
I think it's time to treat yourself to a tropical getaway...Even if it's only on your plate!
Pastry ingredients
100g pitted dates
100g sunflower seeds
50g walnuts
2 tsps vanilla extract
1 tbsp maple syrup
Filling ingredients
100g natural yoghurt (or dairy free. I recommend CoYo or Rebel Kitchen)
2 tbsp honey
The juice of the passionfruit
Passionfruit seeds and mint leaves to garnish
Method
Preheat the oven to 180C. To make the pastry, mix all the ingredients up in a food processor until it forms a dough. Then flatten the dough out and then shape into silicone moulds (I used mini moulds)
Then put the pastry bases into the oven for around 10-15 mins.
Whilst the pastry bases are in the oven, mix all the filling ingredients together in a bowl. Once the tarts are out of the oven, allow them to cool down before spooning in the filling.
Garnish with mint leaves and passionfruit seeds.
