Twix Bars


Craving a mouthwateringly good Twix bar that is dairy-free, gluten-free and won't take forever?

I got you boo.

These homemade Twix bars are stuffed with oats, dates and antioxidant-packed cacao.

You've got the crunchy shortbread layer, followed by a gooey chewy caramel layer and topped off with a rich chocolate layer.

I honestly don't think it gets better than this.

Eating whole foods that are nutritious doesn't have to mean taste-free and it doesn't mean you have to be constantly eating lettuce and celery. Trust me.

This recipe is stuffed with goodness and it tastes unreal. I think it's my favourite one to date.

Let's get started!

Ingredients

For shortbread layer

180g oats

75g coconut flour

80ml melted coconut oil

110ml maple syrup

Pinch of salt

1 tsp vanilla bean paste or vanilla extract

For caramel layer

115g smooth nut butter

170g medjool dates

2 tbsps maple syrup

80ml melted coconut oil

2 tsps vanilla bean paste or vanilla extract

1/4 tsp pinch of salt

For the chocolate layer

(You can use melted dark chocolate but I prefer using cacao as it's got more health benefits!)

50g cacao powder (I use Well + Happy Cacao Powder)

80ml melted coconut oil

3 tbsps maple syrup

Method

For shortbread layer

1. Preheat oven to 180C. Pop the oats in a food processor and whizz up for a few minutes until it has created a flour consistency

2. Put the processed oats, coconut flour, coconut oil, maple syrup and vanilla to a large bowl. Mix together.

3. Grease a pan with coconut oil and place the mixture into the pan. Squash down to form an evenly spread layer. Poke some holes in the top so it can breathe when it bakes.

4. Bake in the oven for around 10-12 minutes. Remove from the oven to cool.

For the caramel layer

1. Blitz the dates in a food processor with 2 tbsps warm water

2. Add all of the ingredients to a saucepan on a low heat and mix together. Remove and allow to cool.

3. Once the shortbread layer is out of the oven, pour on the caramel and spread it out evenly

4. Put in the freezer for around 20 mins

For the chocolate layer

1. Add the ingredients to a saucepan and heat on a low heat and mix together.

2. Pour the chocolate over the shortbread and caramel and spread it out evenly

3. Place in freezer for around 20 mins

4. Take it out of the freezer and cut into Twix bar shapes! Then try and not eat them all. Probably going to be impossible!
