Carrot Hummus Pots

Sugary treats are everywhere at the moment so why not put a spring in your step with this healthy alternative to all the Easter goodies.

This would make a great appetiser for an Easter gathering and little ones can have lots of fun getting involved.

Ingredients

Hummus (Easy to make - 2 cans of chickpeas, 1 clove garlic, 2 tbsps olive oil, 1 tsp herbs, salt and 1/2 cup water. Bend until smooth)

Carrot sticks (I'd opt for baby carrots)

Curly parsley

Method

1. Trim the parsley and poke a hole in the top of the carrots using a toothpick or a skewer. Poke a parsley stem inside each carrot.

2. Fill up your pots full of hummus (I got the pots from Lakeland)

3. Place the carrots into the hummus-filled pots.

4. Serve and enjoy!
