Apricot Easter Egg Pastry Parcels
Easter time!

This recipe tastes great, looks great and doesn't require a lot of preparation. As much fun as entertaining can be, it can be stressful so this can help take a load off over the Easter weekend. This recipe could work as a speedy Easter breakfast or mid-afternoon treat.
The photos are deceiving as there are no eggs used in this recipe whatsoever! Clever stuff.
Pastry isn't always the healthiest - it's always better if you make your own and use good quality ingredients.

Ingredients
- 4 apricot halves
- 1 sheet puff pastry
- 6 tbsps yoghurt (I use Coyo) mixed with 1 tsp vanilla extract
Method
1. Preheat the oven to 180C.
2. Slice the puff pastry into 4 squares and fold the edges over on each square to create a basket shape. Make sure there's enough room for the yoghurt and apricot after baking. Brush with a little almond milk and then place in the oven 10-15 minutes until golden.
3. Once they have cooled down, place a few spoonfuls yoghurt in the centre of each basket and place an apricot on top.
