Lemon Cake

225g coconut oil

400ml coconut milk

2 tbsp apple cider vinegar

100g coconut sugar

2 tsps vanilla extract

425g wholemeal flour

2 tsp baking powder

1 tsp bicarbonate of soda

1 lemon, finely grated zest



1. Preheat oven to 180C. Lightly grease and line the base and sides of a cake tin.

2. Add the coconut milk and apple cider vinegar to a bowl and mix. Stir and leave for 10 minutes. Then put the coconut oil, coconut sugar, coconut milk, vanilla extract, baking powder, bicarbonate of soda and lemon zest into a food processor and mix it until it forms a smooth batter

3. Pour into the cake tin. Bake for 30-35 minutes.
