1 tbsp olive oil
1 medium onion, finely chopped
2 celery sticks, finely chopped
2 garlic cloves, crushed
1 tsp chilli powder
1 tsp smoked paprika
400g of chopped tomatoes
4 tbsps tomato puree
1 yellow pepper, finely chopped
1 red pepper, finely chopped
3 x 400g of beans (mixture of black beans, butter beans, kidney beans etc)
Handful of fresh coriander
1. Heat oil in a large pan and add celery, onions and cook until celery turns translucent.
2. Now add garlic, chilli and paprika and stir round.
3. Add the tomatoes, tomato puree, peppers and 300ml of water and cook over a medium heat for about 25-30 minutes
4. Now add the beans and heat for a further 10 minutes. Add the fresh coriander and serve.
