Winter Slaw

Serves 4
Ingredients
2 tbsps apple cider vinegar
1 tbsp toasted sesame oil
2 tbsps olive oil
4 tbsps coconut yoghurt
Juice of 1/2 lemon
1 fennel bulb - finely chopped
1/2 red cabbage shredded
1/2 white cabbage shredded
2 large carrots grated
4 spring onions chopped
2 tbsps sesame seeds
Handful of fresh parsley
Method Put the olive oil, yoghurt, sesame oil, vinegar, lemon juice, salt and pepper in a bowl and whisk. Then set aside. Put all the fennel, cabbage, carrots and spring onions in large bowl. Stir well. Add the dressing and mix well. Sprinkle over the sesame seeds and parsley.
