Lentil & Cauliflower Salad
Serves 4
Ingredients
1 cauliflower, trimmed and cut into florets
250g cooked puy lentils
60g sultanas
3 tbsps olive oil
2 tsps ground turmeric
1 tsp cumin
2 tsps chilli powder
2 tbsps tahini
1/2 squeezed lemon
2 roasted garlic cloves
1 handful spinach
Method
Mix 2 tbsps olive oil, roasted garlic cloves, 1/2 squeezed lemon, 2 tsps ground turmeric and chilli powder in a bowl. Add the cauliflower to the bowl and mix together. Roast for approx 20-25 minutes in the oven at 180C. Allow the cauliflower to cool down. Add the lentils, cauliflower, sultanas, spinach and the rest of the olive oil to a large salad bowl and mix round.
