Christmas Biscuits


Christmas biscuits. Snappy and spiced with all those gorgeous Christmas flavours. One bite and I am six years old again, covered in flour, baking biscuits with my mum as she dances around the kitchen to Christmas music. Food really is memories.

For me, there is no better way to say 'Merry Christmas' than with a plate of homemade biscuits made with love, spice and all things nice.

These biscuits go marvellously with homemade hot chocolate and were made for lazy mornings snuggled up in a duvet. Cosiness at it's best.

These aren't your normal cinnamon spiced biscuit, they are chewy, sticky and are one of the most delightful things I've ever eaten. Also this recipe was definitely one of the most fun to experiment with because even the rejected batches were lovely! You really can't go wrong with these foolproof biscuits that are sure to dazzle any Christmas guests this holiday season.

Ingredients

150g sifted spelt flour (For a gluten free version, use buckwheat flour!)

100ml melted coconut oil

100g medjool dates

Grated zest of one orange

Grated zest of one lemon

Pinch of cloves

1/4 tsp of ground cinnamon

1/2 tsp mixed spice

1/4 tsp ground nutmeg

Method

1. Preheat your oven to 180C.

2. Put the coconut oil and dates in a food processor and blitz

3. In another bowl, mix together the sifted spelt flour, orange and lemon zest and the spelt flour

4. Add in the dates and coconut oil mixture and mix thoroughly until it forms a dough-like ball

5. Roll this dough out onto a lightly floured board

6. Use any cookie cutters to make the biscuits and place onto a baking sheet lined with parchment paper.

7. Bake in the oven (middle shel) for around 12-15 mins until golden. Put them on a wire cooling rack as soon as they come out of the oven. They will be soft when they come out but will soon firm up when they are cooling.

8. Once cool, decorate or even better... eat!
