Mixed Bean Salad Recipe


Grab those beans from the back of your cupboard and whip up this simple and colourful salad!

A staple of the Mediterranean pantry, beans are a healthy, versatile and affordable ingredient. They are rich in antioxidants, fibre, B vitamins and iron. They're also a hearty and filling alternative to high-fat proteins.

Ingredients

- 240g (or 1 can) mixed beans (drained and soaked for at least 12 hours) - 1/2 large cucumber

- 200g cherry tomatoes, halved

- 6 spring onions finely chopped

- Bunch of fresh coriander

- Salt and pepper

- 1 tbsp maple syrup

- 1 tbsp apple cider vinegar

- Juice of one lemon

Method

Mix the maple syrup, apple cider vinegar, lemon and 1/4 tsp salt and black pepper together in a small bowl to create the dressing.

Mix the remaining ingredients together in a bowl and add the dressing on top. Mix well and serve!
