Biscotti


A fuss-free, gluten-free and low sugar homemade baked biscotti.

This week I'm bringing a taste of Italy to the table! I adore Italy. It's my favourite place in the whole entire world. My happy place. I wish it had lips so I could kiss it.

I have decided one day I'm going to run away to the Italian countryside, live on a farm and spend my days eating, exploring and just falling in love with everything around me.

The Great British Bake Off Week 2 - Healthy Biscotti!

So this week on the Bake Off was biscuit week. Us English just love our tea and biscuits. It's a fact. We do. Nothing like it when 4pm hits and the tummy starts to rumble. Out comes a pile of biscuits and a steaming mug of tea. Hits the spot every time. Now instead of reaching for those unhealthy sugar-laden heavy biscuits, it's time to get creative. This gluten-free (yet not taste-free!) biscotti is going to make everyone envious as you sit there munching away at your homemade healthy baked biscotti. Fancy, right?

Ingredients

4 oz sunflower meal

2 oz coconut

A pinch of sea salt

3 tbsps almond butter

1-2 tsps vanilla extrct

1-2 tsps maple syrup/date syrup

2 oz goji berries

1 handful pistachios

1 egg

Method

All you have to do is whizz up in a food processor and shape it how you would you like (a log like shape is normal, but mine looked more like a fish!)

Now all you have to do is bake it in the oven for 35-45 minutes at 160C fan.

That is it!

I swear it is as simple as that.

If my chosen flavours aren't to your fancy then play around with them! You can jazz it up with anything you would like.

I challenge you not to eat more than one.
