Valentine's Day Cookies


Happy Valentine's Day

Love is in the air!

Are you looking for a tasty and affordable way to say "I love you" this Valentine's Day? Win your way to someone's heart with these irresistible melt-in-the-mouth shortbread biscuits! So light some candles, uncork your favourite bottle of wine and let these biscuits do the work for you this year!

I'm not a huge Valentine's Day fan but I couldn't pass up an opportunity to celebrate a day of love and not make some heart shaped cookies, that would just be rude.

However you will be celebrating this weekend, make sure that you put aside 10 minutes to make the easiest shortbread recipe in the history of mankind!

Ingredients

For the shortbread

150g buckwheat flour

75g butter

2 tbsps maple syrup/raw honey

For the topping

Melted cacao/dark chocolate

Nuts, coconut, freeze dried raspberries, goji berries..Whatever you wish!

Method

Preheat the oven to 180C

Mix together the shortbread ingredients in a blender or food processor until it forms a dough

Roll out the dough to around 1-2cm thick and then using cookie cutters, cut out shapes

Place on a baking tray lined with parchment paper

Bake in the oven for 8-10 minutes

Whilst the biscuits are in the oven, melt some dark chocolate or cacao and prepare your toppings!

Once the biscuits are out of the oven, let them cool down completely before dipping in the chocolate and sprinkling on the toppings.

Now you have my full permission to get stuck on in!

Now don't go beating yourself up if you don't have a Valentine. Just remember that nobody loves you on all the other 364 days too. (I'm joking, I love you!)

Take the time this Valentine's Day to make it about you.

That's what I'm doing!

My friend has renamed the day Galentine's Day (get it?!) to make it a day to spend with your girlfriends to celebrate love in a different way!
