Avocado Ice Lollies


Summer has arrived! The sun has got his old hat on and has come out to play. I really do love this time of the year. The sunshine just makes everything better; people suddenly become friendlier, smiles are on everyone's faces and everywhere just looks so much more beautiful in the sunshine!

With the hot weather comes the need to stay hydrated. Sometimes we don't always want to be knocking back the water and we crave something with a little more flavour. Out come the ice lollies!

Whether you're 5 or 50, you're always the perfect age to enjoy an ice lolly. But don't wait for the ice cream van to turn up - keep it healthy by making your own.

Introducing my new favourite - avocado ice lollies! These are packed full of healthy goodness, easy to prep in just 10 minutes and don't cost a fortune with just four simple ingredients.

These are full of healthy fats with a creamy texture that is guaranteed to cool you down on even the hottest of summer days.

Ingredients

(Makes around 3-4 small ice lollies)

1 cup of coconut milk

1 avocado

1-2 tbsp honey

A squeeze of lemon or lime juice

Choice of topping (I went for desiccated coconut and crushed up pistachios but feel free to mix it up with mixed fruit, chocolate, anything that takes your fancy!)

Method

Blend all the ingredients minus the toppings together in a food processor or a blender

Put your choice of topping into the moulds first and then pour over the blended mixture into the moulds

Leave in the freezer overnight and then enjoy your creamy and healthy homemade ice lollies!

Top tip for getting the lollies out of the moulds: Run some hot water over the outside of the moulds for just a few seconds to help loosen them up so they're easier to get out!
