Toffee Apples



Toffee apples are an old-fashioned favourite that are perfect for Bonfire night or Halloween.

Here is my healthier take on this much-loved classic!

There is nothing quite like the crispy crunch of a juicy apple coated in a creamy and sticky toffee sugar syrup.

They are the perfect accompaniment to a cold autumnal evening! Plus, they taste SO much better than any shop bought toffee apples.

Guaranteed to tempt even the most fruit-phobic child and will take grown ups on a nostalgic trip back in time!

Warning: Sticky fingers guaranteed!

Ingredients 100g coconut sugar 55g butter (or coconut oil or vegan butter) 1 tbsp raw honey (or maple syrup or date syrup) 4 apples 60ml water 1 tsp vanilla extract Toppings of your choice

Method

First of all, line a plate with baking parchment and set aside.

Insert a stick into the core of each apple and place onto a plate.

In a saucepan, melt the coconut sugar and water over a low heat for 1-2 mins stirring all the time until it becomes a thick liquid.

Add the butter, honey and vanilla essence and mix well.

Bring this mixture to the boil and boil for approx 2 minutes. Keep an eye on it so it does not burn!

Lower the heat and stir for about 1 minute until it thickens.

Quickly and carefully coat each apple with the mixture (pour onto the apples and twist them round so all the apples are covered) and place them onto the baking lined parchment lined plate.

Sprinkle over the toppings of your choice.

Leave to set for around 5-10 minutes.

Now tuck into your delicious handmade toffee apples!
