Tofu Berry Cheesecake


For the base:

- 150g oats or oat flour

- 50g nuts

- 2 tbsps melted coconut oil

- 1 tbsp maple syrup

- 2 tbsps coconut sugar

- 1-2 dates

For the filling:

- 1 packet of silken organic tofu

- 1 tbsp agar agar (optional)

- 2 tbsps lemon juice

- 3-4 tbsps coconut sugar

- 1/2 can of coconut cream or coconut yogurt

- 2 tsps vanilla extract

For the topping:

- 50g mixed berries

- 3-4 tbsps of coconut sugar

- Handful of fresh mint

- 2 tsps lemon juice

- 2 tsps vanilla extract

- 1 tbsp maple syrup


1. Blend the base ingredients together in a food processor and place in cake tin and heat in the oven for 10-15 mins at 180C. Leave to cool.

2. Blend filling ingredients togther and place on top of the base and leave to set in the fridge.

3. Once set, blend topping ingredients together and pour on top. Leave to set in the fridge.

4. Once it has set, it is ready!
