Snickers Bars
When I think of snickers I think of my dad. He insists he doesn't really like chocolate and doesn't have a sweet tooth yet at any given time you can always find a chocolate bar in his possession. Snickers take me back to Saturday afternoon football games. Each week it would be a different chocolate bar and no matter what it was, he'd let me have a bite. As soon as I sunk my teeth into that chocolate peanut caramel goodness, I was in heaven. Times have changed. I opt for healthier treats these days but I still remember those Saturday afternoons where the football score wouldn't always go our way but the flavour combinations of Snickers would always be a winner.

I bring good news my friends. It's actually really easy to re-create a snickers bar in your very own kitchen. A wholesome, triple-layered and natural version that tastes sensational. Chocolate and peanuts are meant to be together and this healthy vegan version allows that love to flourish in the best way possible.
Next time someone says to me "Wait, you're vegan? What do you even eat?!" I will shove one of these in their faces and click my fingers and moonwalk away. Which is one of my hidden talents FYI. True story.

Ingredients
For the nougat base:
2 tbsps almond butter
1/2 cup gluten-free oats
1/2 cup almonds
2 tbsps date syrup
1 tbsp coconut flour
Pinch of pink Himalayan salt
For the caramel layer:
12 Medjool dates, pitted and soaked
1/3 cup water
1/2 tbsp date syrup
1/4 tsp pink Himalayan salt
1/2 tsp vanilla extract
1 tbsp melted coconut oil
1 tbsp peanut butter
1/4 cup of peanuts
For the chocolate layer:
150g dark chocolate

Method
- Blend the nougat base ingredients together in a food processor and then press the dough onto a lined banking sheet and use your hands to create a rectangle shape. Place in the freezer to set.
- Next, blend all the caramel layer ingredients apart from the peanuts in a food processor until smooth. Taste it before you continue as you may want to adjust the flavours to how you like it.
- Remove the nougat base form the freezer and spread over the caramel layer. If you have leftover then put it aside to use for another recipes or eat with a spoon later. Sprinkle over the peanuts on top of this layer and gently push into the caramel. Put in freezer for around 40 minutes to set.
- Remove the from the freezer and cut into bars. Melt the chocolate and spread on top. Place them on a lined baking sheet and set in the freezer for about 20-30 minutes. Serve as soon as they are out of the freezer!
